Cask Projects
Here we gather the spirits we work with and the casks they mature in. Each cask is its own project – a combination of spirit and cask allowed to develop on its own terms.
The spirits
Rum
- Cuchana – Brazil. Column still, based on fresh sugarcane juice (agricole style). Unaged.
- Jamaica – Jamaica. Pot still, molasses based. Pre-aged around 3 years in ex-bourbon casks at origin.
- Guatemala – Guatemala. Column still, syrup based. Pre-aged 2–4 years in ex-bourbon casks at origin.
- Guyana – Guyana. Pot & column still blend, molasses based. Pre-aged 2–5 years in ex-bourbon casks at origin.
- Caribbean Blend 2022 – Caribbean (mostly Jamaica), pot/column blend (~80/20), molasses based. Unaged.
Whisky
- Agitator (Sweden) – malt whisky as new make. The unpeated comes in two of our own recipes: HR (fruity) and LR (bready). We also work with a peated Agitator. Unaged.
- Liber (Spain) – malt whisky as virgin new make. Unaged.
The pre-aged rums are bought already matured at origin and then kept in steel tanks (no further ageing with us) before being filled into our casks. The unaged spirits go straight into cask.
